- A really old yam
- 1tbsp olive oil
- 1/2 tbsp balsamic vinegar
- 2 tsp tumeric
- 2 tsp paprika
- 1/2 tbsp hemp seeds
- Pre-heat oven to 420 degrees.
- Cut yam into strips and place in baking pan.
- Drizzle olive oil and balsamic vinegar.
- Add spices and seeds
- Mix everything. I used my hands so there would be fewer dishes to wash.
- Put in oven and set the timer for about 25 minutes.
- Devour like a hungry fox.
Day 49 - Deepawali Curry Feast
Ingredients:
- 1/2 head of pre-steamed cauliflower pieced into small florets
- 3 carrots chopped into bite-sized pieces
- 1/2 cup of cooked azuki beans
- 3 small pre-boiled potatoes cubed
- 1/2 of an onion finely chopped
- 1 tsp curry powder
- 1 tsp mustard seeds
- 1 tsp fennel seeds
- 1 tsp cumin
- 1 tsp cayenne pepper
- 2-3 tsp tumeric
- 1/2 tsp cardamom
- 1 tbsp oil
- Heat oil in a pan with onions, mustard seed, fennel seeds.
- Add all the spices. I added water to prevent burning.
- Add carrots to the mix. Add more water and let simmer for about 5 minutes.
- Add the cauliflower, azuki beans, and potatoes. Add more water and decrease heat.
- Put a lid on and let the spices marinate and infuse the vegetables on low-med heat.
- When the vegetables have softened to whatever degree you like, the curry is ready to eat.
- Put on some Ravi Shankar and invite Lakshmi (goddess of light, grace, fertility, wealth) to a delicious deepawali dinner.
Day 41 - Gluten-Free Wild Apple Crumble
Ingredients:
- Wild apples
- 1 cup of oats
- 1/4 cup brown sugar
- 1/3 cup of ground flax
- healthy handful of hemp hearts
- 1/2 cup of water
- 1 tbsp oil
- 1 tbsp cinnamon
- 1 tsp cloves
- Pre-heat oven to 350 degrees.
- Cut the apples into wedges (saving the cores for cider!) and put into pan.
- I used my Magic Bullet to blend the remaining ingredients together.
- Pour blended mixture over apples.
- Set oven timer for about 30-35 minutes.

Ingredients:
- Wild apple cores
- 1 tsp of cinnamon
- 1/2 tsp of cloves
- 1 cinnamon stick
- hot water
- Juice the cores into a mug.
- Add the spices
- Pour boiled water into the mug until the mug is full.
- Stir with cinnamon stick.

Day 36 - Azuki Bean Brownies

Ingredients:
- about 1 cup of cooked azuki beans
- 1/4 cup of icing sugar
- 1 banana
- a splash of almond extract (vanilla is probably less cyanide-y)
- 1/2-1 cup of water
- about 2 tsp of cinnamon
- 1/4 cup of carob powder
- 1/4 cup of oatmeal
